There are many types of truffles, and each has its own growing season.
Black Winter Périgord Truffles – Tuber melanosporum – France, Italy, Spain, New Zealand, Australia, United States, considered the king of all truffles, due to their powerful and distinct aroma and unique taste. A small amount of this truffle can easily transform a simple meal into a gourmet taste experience. Black truffles go best with foods that absorb their flavor and aroma, such as egg and pasta dishes and are usually available fresh from mid-November through late March.
Summer Truffle – Tuber aestivum – France, Italy, Spain, as their name implies, begin their production in summer. These are available fresh from June through August. The milder flavor of these truffles makes them a perfect complement to lighter meals.
Burgundy Truffle – Tuber uncinatum – France, follow close behind the summer truffle. Their prime growing season is from mid-December through October.
White Truffles – Tuber magnatum – Italy, known to some as the “Diamond of Italy,” are arguably the most sought-after truffles. They are only harvested mid-November to mid-December.
Keep in mind that each variety of truffle can be dried, frozen or canned for use all year long.
